Scotch & Soda
Scotch and soda lengthens whisky without hiding it beneath fruit juice or syrup. The home highball below uses two parts sparkling water to one part Scotch, leaving the whisky’s grain, oak and possible smoke notes easy to recognize. It is a classic preparation to explore alongside the drink named on Beiruty’s menu, not a record of the restaurant’s service. Cold soda and a chilled glass are especially useful because the drink receives only a brief stir. Choose a Scotch you already enjoy; a strongly smoky bottle and a softer blended whisky produce quite different results.

- 45 ml Scotch whisky
- 90 ml chilled soda water
- 150 g ice cubes
- 1 small strip lemon peel, optional
Method
Fill a chilled tall glass with the ice cubes.
Pour in the Scotch and stir for 5 seconds to chill it.
Add the cold soda down the side of the glass and lift gently once with a spoon.
If using lemon peel, squeeze it over the surface and add it to the glass.
Make it your own.
- Choose plain soda without citrus flavoring so the whisky remains the focus.
- For a longer highball, increase soda to 120 ml while keeping the whisky measure unchanged.
