Fresh Ayran
Fresh ayran is a cool yogurt drink with a savory character, making it different from a sweet smoothie or fruit lassi. Yogurt, cold water and a measured pinch of salt are all this home recipe needs. Whisking or blending removes lumps and creates a light foam, while the ratio of water to yogurt determines how easily it pours. Ordinary plain yogurt gives a balanced starting texture; very thick strained yogurt may need extra dilution. Serve ayran thoroughly chilled with seasoned grilled food or mezze, and stir it again if it stands for a while.

Ingredients
- 500 g plain unsweetened whole-milk yogurt
- 500 ml ice-cold water
- 1/2 tsp fine salt, about 3 g
Method
Put the yogurt in a blender or large jug. Add half the cold water and the salt.
Blend or whisk until completely smooth, then add the remaining water gradually while continuing to mix.
Chill for 15 minutes if the yogurt was not already very cold. Whisk vigorously for 20 seconds just before serving to create a light foam.
Pour into four glasses and serve cold alongside food. Stir again if the drink separates while standing.
Make it your own.
- Use plain yogurt without sweeteners or fruit; ayran is a savory drink.
- For very thick strained yogurt, add a little more water at the table until it is easily pourable.
- Start with the measured salt and taste before adding more, especially when serving salty food.
