Berry Mix
Berry Mix combines the fragrance of strawberries, the tart edge of raspberries and the rounded flavor of blueberries in one chilled drink. This original home blend is a practical way to explore the menu’s mixed-berry idea without suggesting that these are the restaurant’s fixed ingredients. A fine sieve removes seeds and skins for a lighter texture, while lime adds a clear finish. The measured syrup is deliberately modest enough to leave the berries recognizable. Serve the drink cold in small glasses, and give the jug a quick stir between pours as natural fruit separation occurs.

Ingredients
- 150 g strawberries, washed and hulled
- 100 g raspberries, washed
- 100 g blueberries, washed
- 600 ml water, divided
- 50 g granulated sugar
- 25 ml freshly squeezed lime juice
- 200 g ice cubes
Method
Heat 100 ml water with the sugar for 2–3 minutes, stirring until dissolved. Let the syrup cool for 20 minutes.
Put the prepared berries, remaining 500 ml water, lime juice and cooled syrup in a blender.
Blend for 45–60 seconds until the fruit is broken down completely. Pour through a fine sieve into a jug, pressing gently to remove seeds and skins.
Divide the ice between four glasses and add the berry drink. Stir and serve while cold.

- Using several berry varieties gives a broader flavor than simply increasing the amount of one fruit.
- Press the sieve gently rather than forcing all the seeds through it.
- If replacing fresh berries with frozen ones, thaw them in the refrigerator and include their juices.
