Beiruty Fries
These oven fries take their cue from the menu’s smoky seasoning, pomegranate and truffle finish. They are designed for home trays rather than a restaurant fryer. The potatoes need a little space to crisp, and the aromatic oil goes on at the end so its flavor stays distinct. This is a home-style interpretation of the menu idea, with measured ingredients and a method suited to an ordinary kitchen. It is not Beiruty’s proprietary restaurant formula. Read the complete method before starting, measure the ingredients first, and use the texture and temperature cues alongside the clock. The external guide offers another cook’s perspective; its seasoning and presentation may differ from this version.

Ingredients
- 900 g floury potatoes, scrubbed
- 2 tbsp neutral oil
- 3/4 tsp fine salt
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1–2 tsp truffle oil, to taste
- 2 tbsp pomegranate seeds
- 1 tbsp chopped parsley, optional
Method
Cut potatoes into even 8 mm sticks. Soak in cold water for 30 minutes to rinse away surface starch, then drain and dry very thoroughly with clean towels.
Heat oven to 230°C/450°F and place two large metal trays inside for 10 minutes. Toss dry potatoes with neutral oil, salt, smoked paprika and garlic powder.
Carefully spread potatoes over the hot trays in a single layer with space between sticks. Roast for 20 minutes.
Turn the fries and rotate trays. Roast for 12–18 minutes more until browned and crisp, checking smaller pieces early.
Transfer hot fries to a bowl. Add 1 tsp truffle oil and toss; taste before adding the second teaspoon. Finish with pomegranate seeds and optional parsley. Serve immediately.
Make it your own.
- Drying the potatoes well matters more than adding extra oil.
- Use two trays rather than crowding one.
- Truffle oils vary greatly in strength; start with a small amount.
