Smoked Pineapple Cinnamon Twist

This Smoked Pineapple Cinnamon Twist home adaptation builds depth with caramelized pineapple and a gently infused cinnamon syrup. The menu’s smoky-inspired description becomes achievable in a home kitchen through grilled fruit, without a smoking gun or burning garnishes. Fresh pineapple supplies texture, juice keeps the drink pourable and lime prevents the warm spice from feeling overly sweet. It remains completely nonalcoholic. Grill the fruit only until it has golden edges and clear marks, then blend and serve cold. The contrast of tropical acidity, caramelization and cinnamon makes a distinctive partner for a savory meal.

Ingredients

  • 350 g fresh pineapple flesh, cut into thick slabs
  • 400 ml chilled pineapple juice
  • 150 ml water
  • 30 g granulated sugar
  • 1 cinnamon stick, about 7 cm
  • 20 ml freshly squeezed lime juice
  • 200 g ice cubes

Method

  1. Combine the water, sugar and cinnamon stick in a small saucepan. Simmer for 5 minutes, remove from the heat and cool for 20 minutes. Remove the cinnamon stick.

  2. Heat a ridged grill pan over medium-high heat. Pat the pineapple slabs dry and cook for 3–4 minutes per side until marked and caramelized. Do not burn them black.

  3. Cool the grilled pineapple briefly, then cut into chunks. Blend with pineapple juice, lime juice and the cooled cinnamon syrup for 45 seconds.

  4. Pass through a coarse sieve, pressing gently, if you prefer a smoother drink.

  5. Divide the ice between four glasses, add the pineapple blend and serve immediately. This method uses grilled fruit for a smoky-inspired note without adding actual smoke.

Make it your own.

  • Use a well-ventilated kitchen and moderate the heat if the grill pan starts smoking excessively.
  • Light charring adds depth, but blackened pineapple can make the whole drink bitter.
  • Cinnamon strength varies; remove the stick after cooling rather than leaving it in the finished jug.
