Old Fashioned
Whiskey, a little sugar and aromatic bitters are enough to build an Old Fashioned with depth and a clear spirit-led character. This general home recipe complements the classic named on Beiruty’s menu without suggesting access to the bar’s exact formula. Simple syrup dissolves evenly, avoiding a layer of sugar left in the bottom of the glass. A large ice cube chills the drink steadily, while expressed orange peel adds aroma without turning it into a fruit cocktail. Bourbon makes a rounder starting point; rye is an option when you prefer a drier, spicier impression.

Ingredients
- 60 ml bourbon OR rye whiskey
- 5 ml simple syrup (1:1 sugar and water by weight)
- 2 dashes aromatic bitters, approximately 1.5 ml total
- 1 large ice cube, approximately 60 g
- 1 strip orange peel, about 5 cm long
- For homemade simple syrup: 20 g granulated sugar and 20 ml warm water (makes about 30 ml; measure only the syrup quantity listed above)
Method
If making the syrup, stir 20 g sugar into 20 ml warm water until completely dissolved. Cool for 5 minutes, then measure the quantity specified in the ingredients; reserve the unused syrup separately. Ready-made 1:1 simple syrup can be used instead.
Pour the syrup and bitters into a short rocks glass and stir them together.
Add the whiskey and the large ice cube.
Stir for 20–25 seconds to chill the whiskey and introduce a little dilution.
Hold the orange peel above the glass, squeeze to release its oils and place it beside the ice.
Make it your own.
- Cut a shallow peel with little white pith to avoid an overly bitter garnish.
- Start with the specified syrup; add another 2.5 ml only if your whiskey needs more sweetness.
